Signature Drinks and Cider Rum Punch

Hosting an open bar at your wedding can be a huge hit to your wedding budget. As coordinators, we get asked all the time by our couples of ways to help them save money without sacrificing quality. A fabulous way to personalize your drink selections while simultaneously managing your bar costs is to offer a limited open bar–meaning you serve only beer, wine, and a signature drink or two to give your guests a little bit of liquor love. Coupled with some cute signage and your guests won’t even miss the full bar!

Since the fall season is creeping up on us, I’ve decided to share an example of a cozy fall cocktail that you could use as a signature drink at your wedding. Enjoy!

Cider Rum Punch (yield: 6 servings)

Ingredients

  • 8 fl oz dark spiced rum
  • 3 fl oz lemon juice
  • 4 fl oz thyme simple syrup (see instructions below)
  • 12 fl oz apple cider
  • 4 fl oz water
  • 4 fl oz club soda
  • 8 dashes Angostura Bitters
  • sprigs of thyme, garnish
  • apple wheels, garnish

Instructions

  1. To make thyme simple syrup, combine 2 cups of sugar, 1 1/2 cups of water and 6 thyme sprigs in a saucepan over medium heat. Bring up to a boil and reduce to simmer, until the sugar has fully dissolved, about 5 minutes. Remove from heat and place the syrup in the fridge to cool.
  2. To make the punch, place all the ingredients in a large pitcher or carafe and stir.
  3. Fill your glasses with crushed ice and fill. Garnish with a sprig of thyme and an apple wheel on the rim.
