Summer is my favorite time of the year to try new recipes with lots of fresh fruits and vegetables. One of my favorite summer recipes is for black bean and corn salsa.

This is a recipe that you can get creative with. Sometimes I will dice up an avocado or a jalapeño and add that. You can also get creative with how you serve it. Tortilla chips are great, but I have also eaten it with pita chips, and it was awesome. Sometimes I will even add it to a salad with grilled chicken. Also, I will add my own spices from home to give it a little extra flavor.

Here’s the basic recipe:

  • 2 cans of black beans (drained)
  • 2 cans of corn (drained) or fresh grilled corn on the cob that is diced
  • 1 diced fresh tomato
  • 1 diced red onion
  • About 1-2 cups of cilantro (I like a lot if cilantro in mine J )
  • Juice of one lime
  • 1 tablespoon of salt

Once you have all the ingredients in the bowl, just mix it up and refrigerate. It’s all about having fun with the vegetables and flavoring it the way you like.
